21 - Colombian Filter
The Twenty One Colombian El Chapal Filter is our first Colombian coffee.
Located in northwestern Nariño, the municipality of La Florida is home to approximately 25,600 people, with the majority of the population making
a living in some sort of agriculture be it coffee farming or cattle ranching.
Diogenes Manchabajoy is a coffee producer in the vereda of El Chapal. At his finca, also named El Chapal, he grows the Castillo variety of coffee at 1,950 m.a.s.l. After hand-selecting the ripest cherries and depulping them, he washes them and begins the fermentation process. After 18 hours, the beans are washed again and put out onto patios to dry for 15 days.
